Architecture and preparation spaces: wineries, wineries and farms.

In Kelin, the most important city of the Iberian region, a merchant's house, dating from the third century BC, where grape seeds and a warehouse with hundreds of amphorae were collected excavated. In Roman times, in the region dedicated to the production rustic villas were established. In one of them, an altar dedicated to Bacchus indicates the importance acquired wine and another appeared a field of vines and two wineries, dating from the third century AD In the Middle Ages, the wineries were underground. The traditional system of fermentation in clay depressed and was perpetuated until the middle of s. XIX. Large estates, reproduced the essence of Roman villas with their areas noble house, workers, stables, cellars ... In most of these farms can be found Roman remains from previous villages. The architecture of the wine in the region of Requena-Utiel is an example of the evolution of structures and spaces linked to production.
